Stuffed Squid Jeon – Squid Sundae Jeon – 오징어순대전 Pimpinella Jeon – Pimpinella Pancake – 참나물전 Lamb Kimchi Stew – 양고기 김치찌개 Stuffed squid is one of the famous foods from Gangwon-do, especially Sokcho. It is made by stuffing squid with a mixture of rice and seafood, giving it a shape similar to a sausage. That is why it is called sundae. Sundae is a type of traditional Korean sausage made by stuffing various ingredients into an edible casing. In this case, the squid itself is used as the casing. So, in Korean, it is called 오징어순대 (ojingeo sundae), literally meaning “squid sundae.” I’ll post the original sundae later whenever I get a chance to try it.😉 If the stuffed squid is coated in egg and pan-fried, it can also be made into 오징어순대전 (squid sundae jeon). This is where jeon comes in. In Korean cuisine, jeon refers to foods that are coated with ingredients such as flour and egg and then pan-fried in oil. Although jeon is often translated as “Korean pancake,” it is not exactly the same as a Western-style pancake. There are many different kinds of jeon, and they are often named after their main ingredient. For example, 파전 (pajeon) is made mainly with green onions, while 참나물전 (chamnamul jeon) is made with pimpinella, a Korean herb. So, when you see a Korean dish ending in jeon, the word usually tells you that the food has been pan-fried in this style, while the word before jeon tells you its main ingredient.
